Banana Bread Muffin Heaven!

I am a bit of what I’d like to call an “over purchaser of bananas”. It seems like every time I make a trip to the market, I feel the need to purchase some bananas. There’s always that thought..you know the one…the nagging one that says “Do we have bananas? I can’t remember? Yeah we do…wait…maybe we don’t?”.

Which is how I seem to always end up with what seems like a hoard of bananas. And it is because of that hoarding that I am able to enjoy some of my favorite muffins of all time! Banana Bread Muffins! Yummmm!! And who better to help me, of course, than my lovely sidekicks!! 🙂

As mentioned here in my very first post to this site, I found the perfect recipe on Pinterest, and will never try any other recipe again! So without further ado, I give you…Banana Bread Muffins!

Ingredients:

  • 1 stick of butter
  • 1 Cup of granulated sugar
  • 1 1/2 Cups of flour
  • 1 tsp baking SODA
  • 2 eggs, beaten
  • 2-3 RIPE bananas
  • a few pinches of nutmeg
  • a few pinches of cinnamon

Directions:

Preheat your oven to 350. Line 12 count muffin tin with cupcake liners. Spray each liner with cooking spray to ensure they won’t stick. (*Note: If you don’t have any liners on hand, spray muffin tin directly with cooking spray)

Cream together butter and sugar. Add 2 beaten eggs.

Combine flour, baking soda, nutmeg and cinnamon in separate bowl and mix together.

Mash bananas in a separate bowl, then add bananas to the sugar/butter/egg mixture and mix until combined.

Slowly add the flour mixture to the wet ingredients, and mix thoroughly.

Fill each muffin liner a little over halfway.

Bake for 20-25 minutes. ( I prefer my muffins a little lighter, so I stick to the 22-ish minute time).
